The USA team got the pleasure of trying some of Chef Silva’s sweets…and they’re hooked!

Chew Innovation, a studio, lab and kitchen in Boston, MA.

2. Describe your kitchen:
It’s the greatest place on earth, magically delicious!!

3. Favourite Chef Works item and why:
All the aprons! Especially the denim ones. Comfy and sexy!
I’m currently wearing the Gramercy Denim Chef Coat – also one of my favourites.

4. First Job:
First job was at Olives NY, as a pastry cook.

5. Your Cookbook:
D.O.M. – Rediscovering Brazilian Ingredients by Alex Atala.

6. Your awards/achievements:
Zagat 30 under 30 NYC, Food Network’s Chopped Champion, Top Ten pastry chefs in the US 2015, People Magazine’s Top 15 Hottest Chefs!

7. Your cooking Inspiration:
My Mom & Dad.

8. Your speciality dish:
Just one?? The Hit Me cake, Cinnamon Roll Donut, Birthday Cake Croissants, and of course THE chocolate chip cookie.

9. Favourite dish to eat:
Dry aged porterhouse steak, and anything my mom makes.

10. Weirdest thing you have eaten:
Guinea Pig – don’t want to talk about it…

11. Favourite ice-cream:
Sweet corn ice cream – my all-time favourite.

12. Favourite drink:
Coke!! I know…I know…

13. Favourite wine:
I don’t have one yet. Hopefully that will change.

14. Who would you most like to cook for:
Julia Child, would just have been an amazing experience.

15. Who would you least like to cook for:
People who don’t appreciate food.

16. Favourite things to do outside of the kitchen:
Being with my family – wifey and the boys.

17. Latest projects:
The Birthday Cake Croissants slammed the internet and NYC, now I’m onto Boston on a new journey, to learn and grow as a chef.

18. Favourite city:
NYC!! No city like it.

19. Greatest indulgence:
I’ll always have room for lots of ice cream!!

20. All-time best culinary tip:
Never stop learning, put your head down and work hard!!
