This lady carries a positive and enthusiastic energy everywhere she goes which is evidently infused into her cooking. Elke has sourced her cooking skills from various platforms, including a 3 year trip exploring cuisine around Australia. Her explorations and experience has successfully been filtered into her catering business, Bite Size Catering.

2. Describe your kitchens

Small and efficient with contrastingly large cool room and freezer. It’s close to home. 

3. Favourite Chef item and why

The aprons; they add colour to the kitchen and make us feel fab, they also fit great.

4. First job

At 14yrs I was flipping burgers, after I was a HSC apprentice chef at Waters Edge restaurant.

5. Your cookbook

I’m writing one write now, Bite Size by Elke. The first chapter is to get the senses working in people by squishing together ingredients in an easy cookie piece. You’ll be able to find it on my website www.bitesizecatering.com.

6. Awards/Achievements

I got a Gold in live cooking in Trans-Tasman and Bronze in Salon Culinary when I was younger, a long time ago now. I do some judging for competitions these days, I haven’t had time to go in any as work and family are in my view.

7. Your cooking inspiration

Fresh local seasonal produce is my stimulant, I find the smells and taste create the best ideas for dishes of the moment.

8. Your speciality dish

Cooking in the moment of season, yesterday’s inspiration was from fresh walnuts I was cracking. I made a nude lemon and sage risotto and instead of loading it up with parmesan, I made a walnut, green Sicilian olive and garlic sour dough crust salsa and served it with pan fried salmon and  gremolata on side. It was so cleanly yummy.

9. Favourite dish to eat

I love seafood; a great chilli crab is heaven.

10. Weirdest thing you have ever eaten

The milk skin crepe at El Bulli in Spain by Ferran Adria.

11. Favourite ice cream flavour

Mmm coffee and pistachio.

12. Favourite Drink

Coffee and red wine.

13. Favourite wine

RWT Penfolds any year is fine. I also recently fell in love with the Charbono at summer winery in Calistoga, California USA.

14. Who would you most like to cook for

Someone who spends their day cooking for others as I know they will appreciate the meal.

15. Who would you least like to cook for

People who don’t cook.

16. Favourite things to do outside of the kitchen

Spending time with my husband, two beautiful boys and dog. We enjoy the beach, swimming and boarding.
